3 lbs 85/15 ground beef (I used grass fed with amazing results)
¾ cup panko or white bread (about a slice per pound of meat)
3 eggs
¼ cup whole milk
1 minced shallot
Sea salt and pepper
½ tsp allspice
½ tsp nutmeg
Olive oil for sautéing shallot
Preheat oven to 450. Sauté onion in a small pan, 2-3 mins until translucent. Remove from heat and allow to cool. Meanwhile, in a large bowl combine panko, eggs, milk, spices, salt and pepper, and cooled shallot. Add meat to bowl and mix by hand to combine. Using a spoon, make into balls. Whatever size you prefer, mine generally come out a bit on the hefty TBS size. Cook at 450 for 12-14 mins, until slightly browned on top and cooked through. Add to your favorite brown gravy recipe and serve with mashed potatoes or egg noodles. Enjoy!
